I absolutely love pink grapefruit. The Paloma cocktail is a Mexican drink made with grapefruit soda and tequila. For this recipe, I used a combination of fresh grapefruit juice and pink grapefruit soda. A squeeze of a lime wedge balances out the sweetness.
Instead of coating the rim of the glass with salt, I used sugar. However, feel free to use salt if you prefer.
I like the Pink Grapefruit Sparkling Italian Soda from Whole Foods Market. For the tequila, use a silver or blanco tequila. I like the blanco tequila from Espolon, which is also available from Whole Foods Market, BevMo, or Binny’s Beverage Depot.
This drink is a great summer alternative to a margarita. Enjoy!
|2 Tbs||fine or superfine sugar, for glass|
|1||small grapefruit wedge, for glass|
|2 oz||silver tequila|
|1 oz||fresh grapefruit juice|
|6 oz||pink grapefruit soda|
|1||lime, cut into 4 wedges|
- Evenly spread sugar on a salad plate.
- Rub the rim of a highball or pint glass with the grapefruit wedge, and then dip it into the sugar mixture to coat the rim of the glass.
- Fill glass with ice and pour in tequila, grapefruit juice, and grapefruit soda.
- Squeeze the wedge from ¼ lime into glass.
- Serve immediately.
